Honey is one of the ingredients in our Chipotle Honey Vinaigrette, which we make from scratch in small batches every morning. Each ingredient was chosen to provide the right blend of flavor: we get sweetness from the honey, acid from the red wine vinegar, saltiness from the salt (duh), and savory floral notes from black pepper and oregano. We use Clover honey, which means that the nectar that inevitably finds its way to the vinaigrette in your salad mostly comes from Clover plants—and if one had four leaves, who knows, maybe it’ll give you a little luck.
A sweet proposition
The oldest honey remains were found in Georgia (the country, not the state), in a tomb dating back some 4,700 to 5,500 years. Now, knowing that most microorganisms don't grow in honey—thus ensuring sealed honey doesn't spoil, ever—would you try it?
