Red wine vinegar is red wine that’s turned into vinegar (don’t you just love it when names make sense?). Since vinegar is fermented ethanol, AKA drinking alcohol, you’re probably wondering if there’s any danger of vinegar-ing under the influence. Lucky for Sofritas enthusiasts, the answer is no. The process of fermentation actually turns the alcohol into acetic acid—a mild colorless liquid that gives vinegar that biting, tart flavor. So while we recommend Sofritas-ing responsibly... feel free to live it up.
