Rice bran oil is our primary cooking oil at Chipotle. Its high smoke point—the temperature at which the oil starts, well, smoking—makes it suitable for high-temperature cooking like grilling, while its mild taste makes it versatile. We use it in places like our salad dressing and to season our rice, just to name a few. We also like that it’s non-GMO (#overachievers).
Rice bran oil is a great way to use the parts of the rice that would otherwise be wasted. The bran, or outer covering of grains of rice, contains oil that, when extracted, can be used as a cooking oil.
