Don't tell the other onions, but the yellow onion is most popular of them all. They make up nearly 90% of the onions grown in the U.S. Compared to the white onion, yellow onions are assertive when raw but become nice and sweet when they’re cooked. At Chipotle, they’re peeled, diced, and mixed with spices and aromatics in the beginning stages of cooking our pinto beans, black beans, and Sofritas.
Onions have been part of the human diet for more than 7,000 years. We take comfort in the fact that even though the early humans got to the onions first, they never got to eat them in a burrito.
